Action Stations - October 5

See our chefs in action at dine-in! At West Side dine-in for lunch, watch as they prepare Chipotle Caesar Salad with Crispy Chicken Tostado. For dinner at East Side dine-in, enjoy Butternut Squash Ravioli with Browned Butter and Sage, prepared fresh at the station.

Community Dinner - October 5

Good food, good company, and a little creativity! SBU Eats is teaming up with Lauterbur Hall for a special Community Dinner at West Side Dine-In from 6pm to 8pm. Lauterbur Hall residents selected the menu, featuring Jerk Chicken with Rice and Peas, Braised Collard Greens, Vegetarian Stuffed Cabbage, Chicken Biryani, and Zeppoli for dessert. Enjoy dinner with friends, then join the fun coloring activity for a creative way to spend the evening!

Smoky Roads BBQ 

Get ready for smoky, savory BBQ loaded with flavor!

  • Lunch at West Side dine-in on October 6: Pastrami-coated beef tri-tip, Dijonaise sauce, Creamed Spinach, and herb-roasted fingerling potatoes 

  • Dinner at East Side dine-in on October 8: Salt and Pepper Smoked Ribs, Garlic Fried Rice, and Charred broccolini with preserved lemons.

Station Takeover: Thai & True

Thai & True brings the flavors and philosophy of Thai cuisine to life with 12 curry recipes spanning a range of heat levels, paired with fresh vegetables. Thai cuisine brings salty, spicy, sour and sweet flavors together in a balanced combination that makes each dish vibrant and flavorful. Be sure to try the featured menu of Green Curry Chicken, Jasmine Rice, Cauliflower, Bell Peppers, and Sweet Potatoes at East Side dine-in for dinner on October 6 and West Side dine-in lunch on October 8.

Teaching Kitchen: Fresh Spring Rolls - October 6

Roll up something delicious! Join Campus Dietitian Laura Martorano, MS, RD, CDN, IFNCP for a fun, hands-on Teaching Kitchen where you’ll learn how to make fresh spring rolls while connecting with friends and fellow Seawolves. This program will take place from 1:30pm to 2:30pm in the SAC Food Court seating area. Space is limited! Sign up on SB Engaged.

Cooking from Home: Share Your Family Recipe

SBU Eats launched a Cooking from Home program to showcase student recipes that remind them of home. Students work alongside the SBU Eats chefs to prepare their recipes and gather the special ingredients to make their dish. Later in the month, the recipes are featured at a dining location so the entire campus community can enjoy these cuisines. Sign up to be a part of the program!

Hispanic Heritage Month Dinner with Guest Chef Adrian Carrillo - October 7

Chef Adrian Carrillo was born in Morelia, Michoacán, Mexico, and raised in Chicago, where he trained at Le Cordon Bleu Culinary School. He has worked alongside acclaimed chefs Stephanie Izard and Paul Kahan and brings his passion for Mexican cuisine, inspired by his mother’s cooking, to the kitchen. His favorite dishes include pozole, mole, enchiladas verdes, carnitas, and tacos al pastor. Chef Carrillo will prepare Mexican Pozole Rojo with slow-cooked Pork for lunch at East Side and West Side dine-in.

Flame Takeover: Beef Bulgogi - October 8

Build your ultimate Beef Bulgogi Sandwich! Starting at 11am at the SAC Food Court, enjoy a Beef Bulgogi Sandwich Hero loaded with peppers and onions, then customize it with your choice of cheese, two sauces, and four toppings. 

Viral Food Trend Alert: Chopped Cheese

Craving the latest food trend? On October 10, SBU Eats is serving up the TikTok-famous Chopped Cheese at East Side and West Side dine-in for dinner. This New York classic combines chopped beef, melted cheese, and flavorful sauces for a loaded sandwich that’s worth the buzz.
