Perfect Pairings
Creamy, Tangy, Mellow, Complex: Matching Wine and Cheese

There is a world of difference between wines made for the mass market, and those made on a small scale from grapes sourced on the estate, just as factory-made cheeses bear little relationship to cheeses made by farmers who tend their own herds. If you've never been impressed by ordinary wine and cheese pairings, get ready to be blown away by this exciting demonstration of hand-crafted wine and cheese pairings.
This tasting will shine the spotlight on regional favorites and demonstrate how to match various styles of wine and cheese to enhance the best in both.
Peter De Meo of Pellegrini Vineyards will lead the tasting using outstanding cheeses sourced from the Village Cheese Shop in Mattituck and Southampton.
In his Pocket Encyclopedia of Wine 2006, British wine critic Hugh Johnson called Pellegrini "Long Island's most enchantingly designed winery... Opulent Merlot, stylish Chardonnay, Bordeaux-like Cabernet Sauvignon... inspired winemaking... Exceptionally flavorful wines."
Authentic Flavors: Pairing Food and Wines of the Region

Since the late 1970's, an authentic Long Island cuisine has been emerging as regional chefs increasingly source their food locally and offer wines grown in the same soils. This tasting will feature two of the Island's rising stars: Roanoke wines and chef Chris Gerdes (formerly of Pentimento Restaurant).
Although Roanoke Vineyards is one of Long Island's newest wineries, its owner, Richard Pisacano, has been tending vines and growing grapes in this appellation for nearly thirty years; he helped plant and maintain most of the first vineyards on the island. Wine critic Lenn Thompson says, "Roanoke is one of my favorite spots... and it's not a little secret in wine country anymore."
This tasting will offer five wine and food pairings designed to surprise, please, and titillate your palate.
Exotic Chocolates, Distinctive Wines: Heavenly Pairings

Wine and chocolate are both wonderfully stimulating, but they don't always make a harmonious match. This tasting will introduce some startlingly unique and delicious wines from the South of France and introduce you to the dynamic flavors of "grand cru" chocolates made by Valrhona, a French chocolate manufacturer based in the small town of Tain L'Hermitage in Hermitage, a wine-growing district near Lyon. The company was founded in 1924 by a French pastry chef from the Rhone valley. Valrhona is currently the only company in the world that produces vintage chocolate made from beans of a single year's harvest from a specific plantation.
Wines for this tasting will be provided by Pasternak Wines, a purveyor of limited edition, allocated wines and spirits from France, Spain, Portugal, Australia, New Zealand, Argentina, Chile, England, and California. Their producers are leaders in their regions whose portfolios are all exceptional in quality and value.
